Cook time: 30 minutes

INGREDIENTS
1   Shallot, chopped
2 tsp   Butter 10 mL
6 ozs   Spinach 180 g
2 cups   Naturegg™ Simply Egg Whites™, well shaken 500 mL
¼ cup   Chopped fresh fine herbs (chives, tarragon, etc.) 50 mL
  Freshly ground pepper
½ cup   Grated Parmesan cheese 125 mL

DIRECTIONS
1. Cook shallot in butter briefly.  Add spinach and cook until wilted.
2. Place spinach mixture on bottom of greased 3 cup (750 mL) shallow baking dish. 
3. Combine egg whites, herbs and pepper.  Pour over spinach.  Sprinkle with cheese.  Bake at 350 °F 160°C) for 25 - 30  minutes or until set.

TIP
* This can be baked in individual serving gratin dishes.
